Gluten-free diets are all the rage lately, with celebrities and athletes alike getting in on the trend. But what does gluten actually do? And how can you tell if it’s in the food you’re eating? What is Worcestershire sauce?
One of the most frequently asked questions I get as a food blogger is if Worcestershire sauce contains gluten. The short answer to that question is no, Worcestershire sauce does not contain any gluten ingredients. In order for something to be labeled gluten free by the FDA, it must contain less than 20 parts per million of gluten. If this were the case with Worcestershire sauce, then people with Celiac Disease or non-celiac gluten sensitivity would have had some type of reaction and there have been no reports of such reactions.
Worcestershire sauce does contain some vinegar, anchovies and other types of fish which are not safe for people with shellfish allergy. However, it also contains plenty of spices like tamarind and molasses. This gives Worcestershire sauce an extremely unique taste that you won’t find in any other type of bottled sauces. Worcestershire Sauce also has sugar added to give it more sweetness than most other sauces or marinades out there as well as onion and garlic powder which gives it its signature flavor that everyone seems to enjoy.
The history of Worcestershire sauce
Worcestershire sauce is a type of English-style brown sauce that was created in the late 18th century by Dr. William Henry Perrins and his friend John Wheeley Lea. They were experimenting with various spices when they happened upon the perfect combination of ingredients: malt vinegar, molasses, sugar, salt and anchovies. The name worcester comes from Worchester Castle where Perrins attended school and lived as an adult. The word worcester itself comes from the old English word for white.
The recipe for Worcestershire didn’t change much over time since its first use on November 11th 1837 to when Dr. William Henry Perrins died in 1926 at age 83.
Worcestershire Sauce has been used on foods such as steak and fish. With Worcestershire being made of vinegar, sugar and sometimes tamarind or onion juice to give it more flavor, in most cases it was considered kosher because vinegar is made from corn (wheat).

It can be incorporated into salad dressings or even mixed into ketchup for additional flavour. Many people are surprised to learn that Worcestershire sauce contains anchovies, which are often a hidden source of gluten. Beyond the anchovies, Worcestershire sauce also contains tamarind paste and molasses. Many brands do contain wheat as well. So if you’re trying to avoid all sources of gluten for dietary reasons or for medical reasons such as Celiac disease, then Worcestershire sauce may not be the best choice for you.
If you’re looking for an alternative to Worcestershire sauce that’s low carb and gluten-free, take a look at fish sauces. Fish sauces are made from fermented fish and contain no wheat or anchovies. The most common fish sauce substitute for Worcestershire sauce is oyster sauce. This thick paste-like condiment has been used as a flavor enhancer in Chinese cooking for centuries. Fish sauces are also commonly found around Southeast Asia, where they may be called nam pla or nuoc mam. To keep things simple when ordering at restaurants that have Asian cuisine on their menu, ask if they have nam pla—you’ll get your dish without wheat without any extra effort! You can usually purchase fish sauces online with little hassle as well.

Is Worcestershire sauce gluten free?
Most Worcestershire sauces are not gluten-free. The main ingredients of Worcestershire sauce are vinegar and molasses, which both contain gluten. However, there are some brands that offer an all-natural version of the sauce with no artificial ingredients. That way you know you’re getting something that’s safe for people with celiac disease or those who avoid gluten for other reasons.
It’s important to note that even if the label says gluten-free or no added MSG, this doesn’t mean it has been certified as such by an organization like the Celiac Sprue Association (CSA). There are still plenty of hidden ingredients that could be making your dish unsafe.
